The things I love most about this particular meatloaf is how incredibly easy it comes together and the fact that I have all of the ingredients on hand pretty much 100% of the time. You can easily get 8 servings out of this recipe. So, you can feed 8 people or in my case 5 – I have two teenage boys – need I say more?

Two things to keep in mind when making a Keto Meatloaf.

  1. Almond flour works best for this recipe. However, you can use Sunflower Seed Flower. Never, ever use Coconut Flour. It will not hold the meatloaf together and you’ll wind up with meatloaf bites instead of meatloaf. Plus, who wants coconut flavored meatloaf?
  2. Make sure you choose a Keto friendly ketchup. All ketchups are not created equal. Make sure you get a ketchup with NO ADDED SUGARS.

What’s in the Keto Meatloaf:

  • 2 Pounds of Ground Beef
  • 1 Large Egg
  • 1/2 Cup of Almond Flour
  • 1 Small Onion
  • 2 Tablespoons of Parsley
  • 1/2 Teaspoon of Dried Oregano
  • 1.5 Teaspoon Garlic Powder
  • 1 Teaspoon of Smoked Paprika
  • Salt & Pepper to taste
  • 1/2 Cup of Keto Friendly Ketchup

The Making of the Keto Meatloaf:

  • Preheat your oven to 350*
  • Mix all ingredients dry ingredients with the ground beef.
  • Once everything is mixed well, add the egg and mix well again.
  • Transfer to 5×9 dish and bake for 30 minutes
  • At the 30-minute mark you will want to remove the meatloaf and add the Keto friendly ketchup to the top of the loaf. Then return the meatloaf to the over for an additional 30 minutes.

If you do by some miracle have leftovers, you can refrigerate them for up to 4 days or freeze them. I like to freeze mine individually, so I only heat up what I want later.
