Perfect Pumpkin Muffins with Oatmeal

It’s that time of year again! The leaves are changing color, the air is getting chilly, and pumpkin spice is in everything. That’s right, fall is here, and that means it’s time to get cooking! One of our all-time favorite recipes here at the kitchen is these Perfect Pumpkin Muffins with Oatmeal. They’re healthy, they’re easy to make, and they’re absolutely delicious. Fabulous Fall Muffins

Perfect Pumpkin Muffins with Oatmeal

Ingredients:

Chocolate Chips for Garnish (Optional)
1 cup pumpkin puree
1 cup almond milk
1 egg
1/2 cup swerve (or sweetener of choice)
1/4 cup vegetable oil
2 cups oats
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

Instructions:

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large bowl, mix together all of the wet ingredients (pumpkin puree, milk, egg, sugar, vegetable oil).
  • In a separate bowl, mix together all of the dry ingredients (oats, baking powder, cinnamon, nutmeg, salt).
  • Add the dry ingredients to the wet ingredients and mix until everything is evenly combined.
  • Line a muffin tin with paper liners and scoop the batter into each one. Fill them about 3/4 of the way full.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool for 5-10 minutes before serving.
  • Enjoy!

TIP: Bake your muffins at the right temperature! Muffins are extremely delicate creatures. Baking them at too high of a temperature will cause them to dry out and become rubbery. Baking them at too low of a temperature will result in undercooked, gummy muffins. The ideal baking temperature for muffins is 350 degrees Fahrenheit.
